New Brunswick is bursting with flavour from its rich wild blueberry fields to the bountiful ocean and the sweetness of Canada's Chocolate Town. In 2009, Granite Town Farms (wild Blueberry Gourmet Products) and the New Brunswick Community College (St Andrews) brought those flavours to life while giving the first-year culinary students the opportunity to compete for a $500 scholarship. The competition challenged the future chefs to develop recipes using gourmet blueberry products and they were judged on creativity, taste and texture. Mathieu Mazorolle was awarded the scholarship for his delectable blueberry-glazed chicken, made with wild Blueberry Vinaigrette, and spinach salad with blue cheese.
This competition was an instant success and the organizers were invited to the Provincial Legislature, where they were formally congratulated for shining the spotlight on New Brunswick's world class products.
